KHMER TIMES / When the spice is right

KHMER TIMES / When the spice is right

It is 10am and Ngin Sina is busy sorting through freshly plucked pepper. She arranges the stems into piles of white, red, and black, and leaves them to dry in the sunshine. Her husband is also hard at work, harvesting pepper in the 400-plant vine behind their home.

This is a typical morning for many villagers in Kampot province’s Kampong Trach district, where almost 400 families are members of Kampot Pepper Promotion Association.
